Establishment has no approved Alternative Operating Procedure. On cook line observed cook touch cooked sausage while plating with bare hands. Spoke with employee regarding proper, employee donned gloves to continue plating.

Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. On front line lower reach-in cooler, ambient temperature thermometer on outside of cooler broken, no longer reading temperature, no other ambient thermometer provided.
