Person in charge states ambient of unit was in temperature at 10:45am. Got down to 42-46F by end of inspection. Provided invoice dated today for delivery. Person in charge began icing items down. Person in charge began moving items from fliptop into other unit used for to go sauces, and called for service for walk in cooler. At cookline cream at 85F, recommend holding on time. In glass door reach in cooler yogurt sauce at 48F. Person in charge states open frequently to get out to go sauces. Ambient temperature of unit 38F during inspection.
