Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. diced tomatoes (58F - Cold Holding at 2:00, placed in cooler at 11:00, retemp 50F at 2:25); pani puri mixture (57F - Cold Holding at 2:00pm, placed in cooler at 11:00, retemp 52F at 2:25); lamb (46F - Cold Holding at 1:55pm, placed in cooler at 11:00, retemp 42F at 2:25) Manager voluntarily discarded the diced tomatoes and Pani puri mixture because they make new batches for the night shift.
