In the flip top cooler next to the reach in freezer, sliced tomatoes (51F - Cold Holding); meatballs (51F - Cold Holding); sliced ham (51F - Cold Holding); cooked chicken wings (51F - Cold Holding). The items were moved to the cooler 3 hours ago when the station was set up. The items were returned to the walk in cooler to chill and cold hold. The items were not prepped or portioned today.

Establishment has no approved Alternative Operating Procedure. Operator made salad/ wrap with cleaned bare hands in salad station for customer order. Advised operator to wear gloves when handling ready to eat foods. Operator remade customer order while wearing gloves.
