Discussed proper handwash techniques with operator, operator educated employees at time of inspection.
Handwash sink removed/out of order from food preparation/dishwashing area. Must be reinstalled/repaired in the same location where removed. Hot and cold running water shut off in handwash sink at expo line due to unable to drains wastewater, employees unable to utilize the handwash sink at time of inspection.

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Ran dish machine multiple times, temped 139.3F-146.5F. Booster heater was turned off, operator turned on at time of inspection, ran dish machine multiple times, temped 159F.
