Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Upon inspection, observed sliced ham 46f in upper make bar cooler, provolone cheese 47f in lower make bar cooler, sliced provolone 59f in upright reach-in cooler. Establishment begins prep at approximately 10:30am for opening at 11:00am and employees confirmed they have been in and out of both make bar cooler and upright reach-in cooler frequently during the lunch rush. Observed ambient temperature inside MFDV to be very warm.
