Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed : the dish wash machine showed 0 ppm after 3 tries and priming. Staff started to troubleshoot.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: gallon milk at 45F in the wait station reach-in cooler. The cap was removed to promote cooling. ALSO, pasta in the walk-in cooler 50F. This may have been out for portioning earlier. This was moved over into the walk-in freezer. The pasta was fully covered upon entrance into the walk-in cooler.
