Observed Salami (119F - Hot Holding); Yuca (119F - Hot Holding); Cooked eggs (131F - Hot Holding); Chicken (113F - Hot Holding); Pork (112F - Hot Holding); Ground beef (115F - Hot Holding) at hot holding unit. As per operator for less than an hour. Operator increased temperature of hot holding unit at the time of inspection.
