Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. raw chicken (44F - Cold Holding); pico de gallo (49F - Cold Holding); salad mix (45F - Cold Holding); raw beef (45F - Cold Holding); cheese (45F - Cold Holding) As per operator pico de gallo prepared five hours ago other items were outside for about 45 minutes. Manager discarded pico de gallo, other food items were moved to walk in freezer for rapid chill.
