Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Cooked sausage observed cooling covered in walk-in cooler. Item was uncovered to encourage proper cooling parameters are met.
Handwash sink used for purposes other than handwashing. Hand wash sink observed being used to fill a gallon water bottle. Additionally hand wash sink had a water filtration system attached. Inspector discussed issue with operator and requirements for handwash sinks to be used for only washing hands.

Establishment utilizing time as a public health control for the reach-in cooler located on the West wall of kitchen. Establishment utilizes a three hour period rather than four and discards items at each rotation. Inspector will provide written application and guidelines for operator.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Reach-in cooler next to flat top the following temperatures were recorded: dill cream cheese (47F - Cold Holding) whipped ricotta (48F - Cold Holding) Inside the walk-in cooler the following temperatures were recorded: cream cheese (47F - Cold Holding) cooked chicken (46F - Cold Holding) hummus (47F - Cold Holding) Operator advised the items in the reach-in cooler were recently filled from the walk-in cooler. Operator stated the walk-in was functioning correctly, however was set to defrost prior to the beginning of the inspection at 0900. Operator stated the ambient temperature of the walk-in cooler was 39F when the establishment opened at 0700. Operator placed above captioned items on ice and the following retemps were taken: dill cream cheese (38F - Cold Holding) whipped ricotta (37F - Cold Holding) cream cheese (43F - Cold Holding) cooked chicken (41F - Cold Holding) hummus (43F - Cold Holding)
