Raw animal food stored over or with unwashed produce. Walk in cooler: raw whole fish stored onions. Discussed with the operator and provided the hand out for the proper storage of food. Operator moved the raw whole fish to another shelf in the walk in cooler.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Table by the cook line: bean sprouts (52F - Cold Holding), as per operator, placed on the table 30 minutes before the inspection. Discussed Time As A Public Health Control with the operator and the proper procedures. Operator placed the bean sprouts inside the walk in cooler. Operator decided to keep the food under temperature.
