Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Checked temperature of roasted chicken 113°f inside the rotisserie cabinet, must maintain 135°f for hot holding, recommend to increase the temperature on the rotisserie unit.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels provided for hand wash sink located in the dish machine area. Manager provided paper towels at time of inspection.
Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Checked hand wash sink has no warm water, found out turned off underneath the sink. Per Person in charge notify the plumber concerning the problem, using another hand sink located in the dish machine area.
