Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Reach in cooler: Observed container of hot dogs not date marked, per operator opened on 1/31/24. Advised operator to date hot dogs.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked peppers and onions (130F - Hot Holding) Per operator, out of temperature for 15 minutes. Per operator, blanched in water in microwave then placed in steam well. Operator returned to microwave to continue cooking to 135F+.
