Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Hot water dishmachine max temperature 139F after 2 runs. Establishment has been closed since Hurricane Helene and this is their first day reopened. Employee ran dishmachine multiple times and temperature reached 160F.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Discussed with employee.
