Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On prep table and front edge of grill, under no temperature or time control, sliced gyro meat (81F - Cold Holding); sliced shawarma meat (76F - Cold Holding). Per employee both sliced from cones approximately 30-45 minutes ago and being held for use. Reviewed proper holding temperatures for foods and employee moved both to fliptop cooler to chill and cold hold.
