Manager stated temperatures were adequate below 41F as of 3 hours prior to inspection, employees in and out of walk in cooler during preparation. Temperatures rechecked 30 minutes later with observed dropping of temperatures in short timeframe. Callback inspection required next available day to verify compliance for cold holding temperatures inside the walk in cooler.
