In kitchen reach cooler less than 4 hours pico (45F - Cold Holding); cut tomatoes (49F - Cold Holding); raw shrimp (45F - Cold Holding)operator put food items on ice and also showed a out for delivery for a new cooler.

Food-contact surface soiled with food debris, mold-like substance or slime. Portable cutting board opposite the fryer has food residue staining spots. Storage place mats on shelf opposite the fryer have build up of food residue/debris. Operator has replacement place mats available.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. In the flip top reach in cooler carnitas previously frozen on 10/24 not properly date marked with the date placed back into refrigeration. Operator placed date mark with new date on the container.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Clean metal bowls stored on the top shelf over the tortilla chips not inverted or covered for protection. Operator inverted the bowls.
Current Hotel and Restaurant license not displayed. At time of inspection current license displayed on wall expired 06/01/2023.
Dead roaches on premises. In the exterior dry storage shed, three dead roaches in a glue trap. Operator swept and discarded the glue trap with the dead roaches.
Duct tape used to repair nonfood-contact surface. Duct tape used to repair microwave push button on the main cook line.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee beverage stored on in use cutting board at the end of the main cook line. Operator relocated the employee beverage.
