Temperatures taken within 4 hours were satisfactory. Operator contacted technician to service the cooler and started to ice down products.

Food-contact surfaces soiled: The cutting board on the reach-in cooler has a mold-like substance. The fans in the walk-in cooler were soiled with dust. The operator cleaned the fans in the walk-in cooler.
Dead roaches on premises. 1 dead roach was found in the chemical closet. The operator swept up the dead roach and sanitized the area.
Equipment and utensils not properly air-dried - wet nesting. Several wet cups are nesting above the soda machine shelf.
No Heimlich maneuver/choking sign posted. Provided the operator with the DBPR HR 5030-105 poster. The operator posted.
