Toxic substance/chemical improperly stored. Two cans of paint were stored with food on the bottom shelf of the dry storage rack next to the ice machine. A propane torch was stored in an opened box of wrapped crackers.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Facility is hand-mixing quat sanitizer for wiping cloths with no test kit. Dishwasher uses chlorine sanitizer with no test kit.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Solution measured in excess of 400 ppm due to improper hand mixing. Operator re-mixed and solution measured 200 ppm. Discussed proper hand mixing and importance of testing sanitizer with Operator.
Working containers of food removed from original container not identified by common name: sugar bin next to the walk-in cooler was not labeled as to the contents.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.; Dishwasher (Chlorine 0ppm) Chemical supply bucket was empty. Bucket was changed, machine was primed and re-ran and achieved 100ppm.
Handwash sink not accessible for employee use at all times. Plate and spoon observed sitting in the basin.

Equipment in poor repair. Shelves in the dishroom holding clean wares observed severely rusted and no longer easily cleanable. Flaking rust can also contaminate food surfaces and should be avoided in food handling environments.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. sausage (52 F - Cold Holding) on cooks line, per operator sausage had been removed less than two hours prior. Operator moved to reach in cooler to rapidly chill.
