Operator move items to walk-in freezer to rapidly chill. Pork chops brought down to 37f and fish down to 41f by hour 4. Operator moved cooled items to walk-in cooler.

Dishmachine chlorine sanitizer reading 0ppm. Manager found tubing was blocked, fixed tubing, and reran machine, resulting in 50ppm.
