Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken hot held at 125F in steam warmer. Per operator, chicken placed in unit 2 hours before the inspection. Operator increased the temperature on the unit.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed at 11:50a.m. Tofu cold held at 44 degrees Fahrenheit in front line cooler. Per operator, item transfer to unit at 10:30 a.m. Operator placed ice pack on item for quick chill.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -Observed rice berries hot held at 109F in crock pot. Per operator, item reheat and transfer to unit 1 hour prior to the inspection. Operator reheat to 171F.
