Manager or person in charge lacking proof of food manager certification and no other certified food service manager employed at this location. Observed operator unable to provide proof of CFM during this inspection. No other CFM employed at this establishment.
Clean-out cap missing from plumbing line. Observed clean out cap missing from exterior of MFDV.
Food stored on floor. Observed container of oil and plastic jug of water stored on floor in front of triple sink. Operator removed oil to properly store.
In-use knife/knives stored in cracks between pieces of equipment. Observed knife and utensil stored between hand wash sink and triple sink. Operator removed utensils to properly store.
Mobile food dispensing vehicle service opening not kept closed except during food service. Observed back window of MFDV stayed propped open with fan.

Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed multiple bags of cooked empanadas in chest freezer with no dates.
