Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Three compartment sink sanitizer 0 ppm. Instructed manager to refilled sanitizer solution in the three compartment sink for proper equipment sanitation. Employee added QT sanitizer solution to water bringing it to approximately 200ppm.
Equipment and utensils not properly air-dried - wet nesting. Clean containers on drain board above the three compartment sink.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Interior of oven soiled, oven across from walk in cooler.
Reach-in freezer interior has accumulation of soil residues, located next to the fryers at cook line.
Standing water or very slow draining water in handwash sink, three-compartment sink, or mop sink. Hand sink at ware washing station.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed sanitizer solution 0ppm. Manager instructed employee to replaced all sanitizer bucket water sanitizer solution.
