Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed manager place gloves on without washing hands after handling items at 3 compartment sink then pickup a container of butter. Stopped manager and educated on proper glove usage.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed butter (50F - Cold Holding) in reach in cooler in prep area. Spoke with manager about ensuring not left out for extended periods during prep, the manager then placed in the walk in cooler.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control with no time mark. Observed container of plantains being held using time as a public health control with no time mark on container. Educated that time mark must be on actual working container. The manager place correct time mark on items.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken (132F - Hot Holding) at front line in steam drawer. Cook removed and reheated cooked chicken 2nd temp after reheat (170F - Hot Holding).
Equipment and utensils not properly air-dried - wet nesting. Observed metal containers near 3 compartment sink. The manager separated the containers for proper drying.
Ice buildup in walk-in freezer.
In-use tongs stored on equipment door handle between uses. Observed tongs stored on front of stove unprotected. The cook removed the tongs.
Insect control device installed over food preparation area. Observed bug zapper installed over soda dispenser near exit door.
Time/temperature control for safety food thawed in an improper manner. Observed bottles of mango pulp being thawed in standing water and 1 in open air. Educated manager on proper thawing and was placed under cold running water.
