Observed cooked chicken (131F - Hot Holding) stored on top of the grill for less than 30 minutes, as per operator. Operator placed item to reheat. Observed steak (113F - Hot Holding) stored in the hot box for 15 minutes, operator reheated items.
Employee with no hair restraint while engaging in food preparation. Observed employee with long braids passing her shoulders with no hair restraints.
Floor area(s) covered with standing water. Throughout the kitchen.
