Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the top hot holding tray on the front counter, cheesy yuca bites (122F - Hot Holding). The item had been holding there for less than 30 minutes. The item was discarded in place of reheating.

Per operator flans transfer from walk in cooler to front counter cooler 1 hour prior to the inspection. Operator placed items on ice bath for quick chill.
Box containing roll/sheets of aluminum foil/plastic wrap/parchment paper/deli tissues has old food debris/soil residue inside. Observed accumulation old food residue buildup in box containing plastic wrap. Operator changed container.
