Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Raw marinated pork (50F - Ambient Cooling for 2 1/2 hours at 2:30, 50F at 2:55) in tin foil covered pan in walk in cooler. Operator moved items to blast chiller to increase cooling rate.
