Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut lettuce (45F - Cold Holding)at reach in cooler near fryers. As per GM for less than 2 hours. GM voluntarily discard product. Observed raw chicken breast (45F - Cold Holding) at reach in cooler near three compartment sink. As per GM for less than an hour. GM placed product in walk in freezer.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed shredded grilled chicken (128F - Hot Holding) at preparation line. As per GM for less than an hour. GM reheated shredded grilled chicken (167F - reaheating).
Handwash sink used for purposes other than handwashing. Observed handwash sink across fryers with food debris.

Manager transferred food to the walk in freezer to rapidly cool down.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sweet plantains (67 F - Cold Holding) inside the walk in cooler. As per operator they were been prepared for less than 4 hours. They placed it inside the walk in freezer for rapid cooling.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed prepared pork sandwiches at 102°f in the thot drawer. According to operator they were just prepared, operator reheated sandwiches and placed back in drawer.

Exterior door has a gap at the threshold that opens to the outside. Observed at the back exit door.
