Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Hard boiled eggs (54F) at flip top in kitchen in unit less than 4 hours. Operator moved to cooler to quick chill.

Aji and green sauce. Foods are dated in freezer but not re-dated when removed from freezer.
