Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. At kitchen, high temperature dish machine not reaching 160F. Advised operator to use 3 compartment sink to properly wash rinse sanitize dishes until dish machine is repaired. Operator set up 3 compartment sink.
