Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At upright stainless reach in cooler; shredded cheese (45F - Cold Holding). Operator stated not prepared or portioned today, held on bottom shelf of reach in cooler, fan unit blocked by multiple trays of biscuits blocking airflow for less than 4 hours, moved to walk-in cooler.
