Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Red Beans and Rice in food warmer temping between 109F- 117F. Per operator items were heated and placed in warmer by 9:30 am. Operator reheated to 171F and 206F.
