Observed container of cooked rice at temperature of 73F stored in walk-in cooler. Per person in charge rice was cooked 3 hours prior. Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed container of cooked rice at temperature of 73F stored in walk-in cooler. Per person in charge rice was cooked 3 hours prior. Cooked rice was in a large covered container with another container of cooked rice on top of it.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed two pieces of cooked chicken under heat lamp with temperatures of 111-117F. The bulb for heat lamp directly above chicken was not lit. At hot holding unit behind from registers, cooked chicken breast (121F - Hot Holding). Manager stated the chicken had been under hot holding unit for 40 mins. Manager dropped chicken back into fryer to get temperature up, retemp 152F.
