Amount of ice bath barely touches bottom of rice container. - Observed raw chicken tenders in deep metal containers. Manager states employee previously thawed tenders under running water before portioning. Advised manager to move items to freezer for expedited cooling.

Currently the splitter is set up with a water line to a chemical dispenser and the other side is open. The open side needs a vacuum breaker added. The chemical device has its back flow protection built in.
