Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On shelf inside reach-in cooler: ham (45F - Cold Holding); sliced cheese (53F - Cold Holding). Manager stated both items were on the counter while she was rearranged the cooler approximately 15 minutes prior. Manager added ice to rapidly cool both items to 41F during this inspection.
