Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : liquid whole eggs in a carton on the prep table, 66°. These had been out for 40 minutes, per staff. They were placed in an ice bath and put uncovered in the walk-in freezer, reading at 40° when they came out.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed : the outside water hose connection lacks a back flow device.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Observed : a clean up plan was not available for review. One was emailed.
Bowl or other container with no handle used to dispense food. Observed : soufflé cups used to dispense/measure crumble cheese.
