What the inspector wrote — 5 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler in the middle of food prep area observed provolone cheese (47F - Cold Holding). Whole block of cheese is being stored above fill line. Cheese has been stored in that manner around 10am opening. Operator rearranged cheese so they all are below fill line.
