Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. butter (74F - Cold Holding) sitting on shelf in prep area, employee stated he softens butter overnight at room temperature, spoke to employee about softening butter just before he needs to use it so item doesn't sit in the temperature danger zone for more than 4 hours. See stop sale.
