Observed employee Cracking raw shell eggs then wiped hands on dry wiping cloth and placed rag on cutting board at flip top cooler. Educated employee. Employee removed gloves and washed his hands.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed Raw shrimp over cooked peppers at cook line flip top, raw smoked salmon over sauces at low boy reach in cooler. Operator stored products properly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cold station flip top: tuna salad (51F - Cold Holding); chicken salad (51F - Cold Holding) Per operator, not prepared or portioned today.
