Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at buffet line cottage cheese (50F - Cold Holding); rice pudding (50F - Cold Holding); Milk (50F-Cold Holding). As per chef, food was put on line less than 1 hour under ice, continuously changing throughout breakfast shift.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed at buffet line Sausage (130F- Hot Holding) chef increased temperature on warmer.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels next to hand sink next to espresso machine. Chef put paper towels at sink.
Carbon dioxide/helium tanks not adequately secured. Observed CO2 containers not properly secured. Chef tied them with chain.

Observed Grilled Chicken dated 2/17 vacuum sealed in walkin cooler. Emailed Executive Chef HACCP information.
