Establishment sells ceviche and utilizes nonexempt fish -wahoo, snapper and grouper- discussed with operator who advised he will obtain parasite destruction and cook fish fully.
Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment. Discussed with operator to keep tags in chronological order for muscles for 90 days.
