What the inspector wrote — 4 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On front counter buffet line, milk (52F - Cold Holding) in insulated container. Discussed with operator filling less product and switching out regularly to maintain better temperature, operator removed from buffet line as service was ending shortly and would be discarded after service.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the sliding door reach in cooler, egg patty (47F - Cold Holding); sausage patty (48F - Cold Holding). Per operator doors left open for service, ambient air with door closed of cooler for 10 minutes is 48F. Instructed operator to relocate time/temperature control food for safety food to the reach in freezer. All food relocated to the freezer.
