Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked pork (61F - Cold Holding); cooked ham (48F - Cold Holding) on preparation table. As per operator no more than one hour. Operator placed them inside oven to be reheated..
