Operator moved and stored correctly. Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Raw comminuted beef stored over ready-to-eat cinnamon rolls with both of the boxed open in the reach-in freezer at the end of the cook line. Operator moved and stored correctly.
In-use ice scoop stored on soiled surface between uses. Ice scoop stored directly on top of ice machine. Operator moved to have cleaned and sanitized.

No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. The test kit is expired.
Ice scoop handle in contact with ice. There is a bucket in the ice bin being used to scoop ice.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In vertical cooler at end of cook line - pooled eggs (45F - Cold Holding); sliced tomatoes (44F - Cold Holding), both prepped yesterday. Vertical cooler in storage area-Canadian bacon (45F - Cold Holding); cooked sausage links (44F); sliced roast beef (46F - Cold Holding) Wait station cooler - house made blu cheese (45F - Cold Holding); cottage cheese (49F - Cold Holding); house made ranch (46F - Cold Holding); moved to freezer, repair tech onsite at time of inspection. Temperatures taken at 7 am.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Butter pats in bucket were set out for time control at 7 am, It back into cooler, 65 F, discussed proper time control, operator took butter out of cooler and will discard after 4 hour time. Time control instructions were reviewed and emailed to operator. (5023+100)

Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee drop portion cup on kitchen floor, employee picked up cup off the kitchen floor to discard, and continued to portion sauce into cups without changing gloves or washing hands.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed a mold-like substance inside of ice chute in soda dispensing machine in wait station area and behind soda nozzles on the base of the dispensing units.
Accumulation of black/green mold-like substance in the interior of the ice machine.
Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed employee with bracelets on cook line.
Equipment and utensils not properly air-dried - wet nesting on containers stacked together on storage shelf to the left of the three compartment sink.
