Cooked seafood not reaching a minimum internal temperature of 145 degrees Fahrenheit for 15 seconds. Cooked shrimp cooked to 120F and put out at service window for service. Manager recooked fish to 167F.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee online handle raw shrimp, remove gloves, and proceed to put on new gloves without a hand wash. Discussed with manager proper handwashing techniques
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Pico de Gallo located at wait station 51F - Cold Holding. Manager relocated item to cold holding unit. Rechecked temperature at 38F
