Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sour cream (58F - Cold Holding); shredded cheese (57F - Cold Holding) in prep area. The operator stated they had been out less than 2 hours and relocated to the walk in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed melted butter hot held at 122F, the butter had been held for less than 2 hours. Educated the operator on time as a public health control, the form was emailed to the operator.
