Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sink and surface sanitizer for sanitizer bucket strength unable to be determined. Sink and surface test strip turned yellow and yellow is not shown on color concentration chart. Advised operator to get new test kit.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. shredded cheddar (52F - Cold Holding) Observed resting above ice bath at server expo area. Advised operator to ensure product is fully submerged in ice bath. Per operator, not prepared or portioned today. Per operator, out of temperature approximately 30 minutes. Operator fully submerged in ice bath.

Produce cooler: diced tomatoes (50F - Cooling) at 12:00 since 11:00 - 49F 12:30 Observed in plastic container with lid on. At current rate of cooling product will not reach 41F within 4 hours. Operator moved to freezer to quick chill.
