Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Ran dish machine and tested 10ppm. Prime sanitizer manually and ran dish machine multiple times, tested 50ppm.
Employee washed hands with cold water. Employee washed hands with cold water temped 81 F. Employee rewashed hands with water temped 85+ F after coached by operator.
Toxic substance/chemical improperly stored. Machine lubricant stored on dry food storage shelf with canned food. Operator moved to chemical storage.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer bucket tested 200+ppm chlorine. Employee remade solution and test 100ppm.
