Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In kitchen double door reach-in cooler, butter (44F - Cold Holding); boiled eggs (45F - Cold Holding). Operator stated cooler opened during breakfast.
Food-contact surface soiled with food debris, mold-like substance or slime. At buffet, OJ nozzle on juice dispenser has build up on nozzle.
No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Manager not able to provide certificates for any employees. One hired 2 months, one 3 months. Operator can email food handler training certificates to inspector, callback will be complied without an onsite inspection.

All items placed out approximately three hours prior. Cheese and eggs voluntarily discarded. Butter and cream cheese moved to reach in cooler to cool.
