Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. Reach in cooler thermometer reads 26F, food temperatures are 43F.
Clean utensils stored between equipment. On the front cook line, a knife was stored between the flip top cooler and the table. The knife was removed.
